Description
A creamy, cheesy gluten free soup made with fresh broccoli and sharp cheddar. This comforting bowl is wheat-free, easy to make, and perfect for cozy meals.
Ingredients
4 cups fresh broccoli florets
2 tbsp butter or olive oil
1 small onion, finely chopped
2 cloves garlic, minced
2 cups gluten-free vegetable or chicken broth
2 cups shredded sharp cheddar cheese
1 cup milk (or dairy-free alternative)
1/2 cup heavy cream (optional)
2 tbsp cornstarch (or arrowroot)
Salt and pepper to taste
Instructions
1. In a large pot, melt butter over medium heat. Add onion and sauté until soft.
2. Stir in garlic and cook for 30 seconds.
3. Add broccoli and gluten-free broth. Simmer for 10–12 minutes until broccoli is tender.
4. In a small bowl, mix cornstarch with a bit of water to make a slurry. Stir into soup and simmer until thickened.
5. Use an immersion blender to partially blend soup, leaving some chunks.
6. Lower heat and stir in milk, cream (if using), and shredded cheddar. Mix until melted and smooth.
7. Season with salt and pepper. Serve hot.
