4 cups chopped broccoli florets
1 small onion, diced
2 cloves garlic, minced
2 tbsp butter or olive oil
2 cups gluten-free vegetable or chicken broth
2 cups shredded sharp cheddar cheese
1 cup milk (or non-dairy alternative)
1 cup heavy cream (optional)
2 tbsp cornstarch or arrowroot powder
Salt, pepper, and paprika to taste


Instructions

1. In a large pot, sauté onion in butter over medium heat until translucent. Add garlic and cook for 30 seconds.
2. Stir in broccoli and pour in gluten-free broth. Simmer for 10–12 minutes until tender.
3. In a small bowl, mix cornstarch with a splash of cold water. Stir into soup and simmer 3–5 minutes to thicken.
4. Use an immersion blender (or regular blender) to partially blend for creaminess.
5. Lower heat and stir in milk, cream (if using), and shredded cheddar until melted.
6. Season with salt, pepper, and paprika to taste. Serve hot.
