Ingredients
2 ripe bananas
3 eggs
1/2 cup cottage cheese
3 tbsp maple syrup
2 tsp vanilla extract
2 1/2 cups almond flour
1 tsp baking soda
2 tsp cinnamon
Optional: chocolate chips, walnuts, or blueberries
Instructions
1. Preheat oven to 350°F and line a loaf pan with parchment paper.
2. In a large bowl, mash the bananas.
3. Add eggs, cottage cheese, maple syrup, and vanilla. Whisk until smooth.
4. Mix in almond flour, baking soda, and cinnamon until fully combined.
5. Pour batter into prepared loaf pan.
6. Bake for 50 minutes, covering with foil after 30 minutes if browning too quickly.
7. Cool for 10 minutes in pan, then transfer to a rack. Slice and serve.
